Instructions
Heat olive oil in a pot over medium heat.
Add chopped onion and minced garlic. Sauté until soft.
Add fresh spinach and cook until wilted.
Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 10 minutes.
Blend the soup until smooth using a blender.
Return the soup to the pot, stir in milk, and season with salt and pepper. Heat through but do not boil.
Serve hot.
