Ingredients 

Main Ingredients

  • 1 tablespoon Olive oil
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Spinach fresh
  • 4 cups Vegetable broth
  • 1 cup Milk
  • to taste Salt
  • to taste Black pepper

Instructions 

  1. Heat olive oil in a pot over medium heat.
  2. Add chopped onion and minced garlic. Sauté until soft.
  3. Add fresh spinach and cook until wilted.
  4. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 10 minutes.
  5. Blend the soup until smooth using a blender.
  6. Return the soup to the pot, stir in milk, and season with salt and pepper. Heat through but do not boil.
  7. Serve hot.
