Main Ingredients
- 4 cups cucumbers, finely chopped
- 2 cups onions, finely chopped
- 1 cup green bell peppers, finely chopped
- 1 cup red bell peppers, finely chopped
- 1.5 cups white vinegar
- 2 cups sugar
- 2 tablespoon salt
- 1 tablespoon mustard seeds
- 1 teaspoon celery seeds
1. Combine cucumbers, onions, and bell peppers in a large bowl. Sprinkle with salt and let sit for 2 hours.
2. Drain and rinse the vegetables thoroughly.
3. In a large saucepan, combine vinegar, sugar, mustard seeds, and celery seeds. Bring to a boil.
4. Add the drained vegetables to the saucepan. Return to a boil, then reduce heat and simmer for 10 minutes.
5. Pack the relish into hot, sterilized jars, leaving ½ inch headspace. Seal and process in a boiling water bath for 10 minutes.
