  • 2 large sweet potatoes peeled and cubed
  • 2 large russet potatoes peeled and cubed
  • ½ cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup chopped green onions

Instructions 

  1. 1. Boil sweet potatoes and russet potatoes in a pot until tender, about 15 minutes. Drain and let cool.
  2. 2. In a mixing bowl, combine mayonnaise, Dijon mustard, salt, and black pepper.
  3. 3. Add the cooled potatoes and chopped green onions to the bowl. Mix well.
  4. 4. Chill in the refrigerator for at least 1 hour before serving.
