  • 1 can Black-eyed peas drained and rinsed
  • 1 can Black beans drained and rinsed
  • 1 can Corn drained
  • 1 Red bell pepper chopped
  • 1 Green bell pepper chopped
  • 1 Red onion chopped
  • ½ cup Cilantro chopped
  • ½ cup Italian dressing

Instructions 

  1. In a large mixing bowl, combine black-eyed peas, black beans, corn, red bell pepper, green bell pepper, red onion, and cilantro.
  2. Pour Italian dressing over the mixture and toss to coat evenly.
  3. Refrigerate for at least 1 hour before serving to allow flavors to meld.
