- 1 can Black-eyed peas drained and rinsed
- 1 can Black beans drained and rinsed
- 1 can Corn drained
- 1 Red bell pepper chopped
- 1 Green bell pepper chopped
- 1 Red onion chopped
- ½ cup Cilantro chopped
- ½ cup Italian dressing
In a large mixing bowl, combine black-eyed peas, black beans, corn, red bell pepper, green bell pepper, red onion, and cilantro.
Pour Italian dressing over the mixture and toss to coat evenly.
Refrigerate for at least 1 hour before serving to allow flavors to meld.
