Ingredients

  • 1 tablespoon vegetable oil
  • 1 cup sliced mushrooms
  • 1 cup chicken broth
  • 1 can coconut milk
  • 1 tablespoon red curry paste
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 cup shredded chicken cooked
  • 1 tablespoon lime juice
  • 1 tablespoon cilantro chopped

Instructions 

  1. Heat the oil in a large pot over medium heat. Add the mushrooms and cook until tender, about 5 minutes.
  2. Add the chicken broth, coconut milk, and red curry paste. Bring to a simmer.
  3. Stir in the fish sauce and brown sugar. Add the shredded chicken and cook until heated through, about 5 minutes.
  4. Remove from heat and stir in the lime juice and cilantro. Serve hot.
