Ingredients 

Main Ingredients

  • 2 medium beets peeled and grated
  • 1 large carrot peeled and grated
  • 1 medium onion chopped
  • 3 cups cabbage shredded
  • 3 cups water
  • 2 tablespoon tomato paste
  • 2 tablespoon vegetable oil
  • 2 cloves garlic minced
  • to taste salt
  • to taste black pepper
  • 1 tablespoon vinegar
  • 1 tablespoon sugar
  • ¼ cup fresh dill chopped
  • to serve sour cream

Instructions 

  1. 1. Heat the oil in a large pot over medium heat. Add the onion and cook until soft.
  2. 2. Add the beets, carrots, and garlic. Cook for another 5 minutes.
  3. 3. Stir in the tomato paste and cook for 2 minutes.
  4. 4. Add the water, cabbage, bay leaf, vinegar, sugar, salt, and pepper. Bring to a boil.
  5. 5. Reduce heat and simmer for 1 hour.
  6. 6. Remove the bay leaf, stir in the fresh dill.
  7. 7. Serve hot with a dollop of sour cream.
