Ukrainian Red Borscht Soup Recipe
A traditional Ukrainian beet soup, hearty and flavorful.

Main Ingredients
- 2 medium beets peeled and grated
- 1 large carrot peeled and grated
- 1 medium onion chopped
- 3 cups cabbage shredded
- 3 cups water
- 2 tablespoon tomato paste
- 2 tablespoon vegetable oil
- 2 cloves garlic minced
- to taste salt
- to taste black pepper
- 1 tablespoon vinegar
- 1 tablespoon sugar
- ¼ cup fresh dill chopped
- to serve sour cream
1. Heat the oil in a large pot over medium heat. Add the onion and cook until soft.
2. Add the beets, carrots, and garlic. Cook for another 5 minutes.
3. Stir in the tomato paste and cook for 2 minutes.
4. Add the water, cabbage, bay leaf, vinegar, sugar, salt, and pepper. Bring to a boil.
5. Reduce heat and simmer for 1 hour.
6. Remove the bay leaf, stir in the fresh dill.
7. Serve hot with a dollop of sour cream.
