Ingredients 

Taco Filling

  • 1 can Chickpeas drained and rinsed
  • 1 tablespoon Olive Oil
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • ½ teaspoon Garlic Powder
  • ½ teaspoon Onion Powder
  • ½ teaspoon Salt
  • ¼ teaspoon Black Pepper

Taco Assembly

  • 8 small Tortillas
  • 1 cup Shredded Lettuce
  • 1 cup Diced Tomatoes
  • ½ cup Sour Cream
  • ½ cup Shredded Cheese

Instructions 

  1. Heat the olive oil in a skillet over medium heat.
  2. Add the chickpeas and spices to the skillet. Cook for 5-7 minutes, stirring occasionally.
  3. Warm the tortillas in a separate pan or microwave.
  4. Assemble the tacos by adding the chickpea mixture to each tortilla, then top with lettuce, tomatoes, sour cream, and cheese.
