Taco Filling
- 1 can Chickpeas drained and rinsed
- 1 tablespoon Olive Oil
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- ½ teaspoon Garlic Powder
- ½ teaspoon Onion Powder
- ½ teaspoon Salt
- ¼ teaspoon Black Pepper
Taco Assembly
- 8 small Tortillas
- 1 cup Shredded Lettuce
- 1 cup Diced Tomatoes
- ½ cup Sour Cream
- ½ cup Shredded Cheese
Heat the olive oil in a skillet over medium heat.
Add the chickpeas and spices to the skillet. Cook for 5-7 minutes, stirring occasionally.
Warm the tortillas in a separate pan or microwave.
Assemble the tacos by adding the chickpea mixture to each tortilla, then top with lettuce, tomatoes, sour cream, and cheese.
