White Bean Chicken Chili
A hearty and comforting chili made with white beans and chicken.

Main Ingredients
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 lb chicken breast, diced
- 2 cans white beans, drained and rinsed
- 4 cups chicken broth
- 1 teaspoon cumin
- 1 teaspoon oregano
- 1 teaspoon chili powder
- 1 cup frozen corn
- to taste salt and pepper
Heat the olive oil in a large pot over medium heat.
Add the diced onion and cook until translucent, about 5 minutes.
Add the minced garlic and cook for another minute.
Add the diced chicken breast and cook until browned.
Add the white beans, chicken broth, cumin, oregano, and chili powder. Stir to combine.
Bring to a boil, then reduce heat and simmer for 20 minutes.
Add the frozen corn and cook for another 5 minutes.
Season with salt and pepper to taste. Serve hot.
