- 1 lb chicken breast, diced
- 2 cans white beans, drained and rinsed
- 1 cup chicken broth
- 1 cup sour cream
- 1 cup shredded cheese
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon oregano
- 1 teaspoon chili powder
- 1 teaspoon salt
- 0.5 teaspoon black pepper
1. In a large pot, cook the diced chicken over medium heat until no longer pink.
2. Add the diced onion and minced garlic to the pot and cook until the onion is translucent.
3. Stir in the ground cumin, oregano, chili powder, salt, and black pepper.
4. Add the white beans and chicken broth to the pot, bring to a boil, then reduce heat and simmer for 20 minutes.
5. Remove from heat and stir in the sour cream and shredded cheese until melted and well combined.
6. Serve hot, garnished with additional cheese or sour cream if desired.
