- 2 cups Zucchini, grated
- ½ cup All-purpose flour
- 1 large Egg
- ¼ cup Green onions, chopped
- ¼ cup Parmesan cheese, grated
- ½ teaspoon Salt
- ¼ teaspoon Black pepper
- 2 tablespoon Olive oil for frying
1. Grate the zucchini and squeeze out excess moisture using a clean kitchen towel.
2. In a mixing bowl, combine grated zucchini, flour, egg, green onions, Parmesan cheese, salt, and pepper. Mix well.
3. Heat olive oil in a frying pan over medium heat.
4. Scoop tablespoons of the zucchini mixture into the pan and flatten slightly. Cook until golden brown, about 2-3 minutes per side.
5. Remove fritters from the pan and drain on paper towels. Serve warm.
