Ingredients 

Main Ingredients

  • 3 lbs oxtail
  • 2 tablespoon vegetable oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 sprigs thyme
  • 2 cups beef broth
  • 1 tablespoon browning sauce
  • 2 carrots carrots, sliced
  • 1 can butter beans, drained
  • to taste salt and pepper

Instructions 

  1. 1. Heat the oil in a large pot over medium-high heat. Add the oxtail and brown on all sides.
  2. 2. Add the chopped onion, minced garlic, and thyme. Cook until the onion is translucent.
  3. 3. Pour in the beef broth and browning sauce. Bring to a boil, then reduce the heat to low, cover, and simmer for 2.5 to 3 hours, or until the oxtail is tender.
  4. 4. Add the sliced carrots and drained butter beans. Cook for an additional 30 minutes, or until the carrots are tender.
  5. 5. Season with salt and pepper to taste. Serve hot.
