Ingredients

  • 2 racks lamb frenched
  • 2 tablespoon olive oil
  • 4 cloves garlic minced
  • 1 tablespoon rosemary chopped
  • 1 tablespoon thyme chopped
  • to taste salt
  • to taste black pepper freshly ground

Instructions 

  1. Preheat your oven to 450°F (230°C).
  2. Season the lamb racks with salt and pepper.
  3. Heat olive oil in a pan over medium-high heat. Sear the lamb racks on all sides until browned.
  4. Mix garlic, rosemary, and thyme in a bowl. Rub this mixture over the lamb.
  5. Place the lamb racks in a roasting pan and roast in the preheated oven for 20-25 minutes, or until the internal temperature reaches 135°F (57°C) for medium-rare.
  6. Let the lamb rest for 10 minutes before slicing and serving.
