Main Ingredients
- 1 cup Dried split peas rinsed
- 1 medium Onion chopped
- 2 cloves Garlic minced
- 2 cups Vegetable broth
- 1 cup Water
- 2 medium Carrots chopped
- 2 stalks Celery chopped
- 1 teaspoon Salt to taste
- ½ teaspoon Black pepper to taste
1. In a large pot, heat a bit of oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
2. Add the carrots and celery, and cook for a few more minutes.
3. Add the dried split peas, vegetable broth, and water. Bring to a boil.
4. Reduce heat to low, cover, and let simmer for about an hour, or until the peas are tender.
5. Season with salt and pepper to taste. Serve hot.
